Green Tip #69: Keep the Veggie Water

vegetable soup veggieAlthough Sustainable PF and I mostly eat our veggies raw we do cook them from time to time and I always try to remember this important tip: keep the veggie water. Why? Well it makes great stock for soup! You can freeze the veggie water and use it later or simply put it in the fridge if you plan on using it soon. It’s flavourful water but its also jam packed with nutrients from the vegetables that cooked in it. My Mum is a great soup maker and this is a tip that she taught me. The only thing to be cautious of is broccoli water. This is such a strong water that its really only good for broccoli soup.

  1. I do this too! It’s a great way to get a little extra mileage out of your food. As well, many vitamins are water soluble, so they enter the water when boiled. Saving the liquid for other uses saves some of those vitamins for your diet. :)
