Although Sustainable PF and I mostly eat our veggies raw we do cook them from time to time and I always try to remember this important tip: keep the veggie water. Why? Well it makes great stock for soup! You can freeze the veggie water and use it later or simply put it in the fridge if you plan on using it soon. It’s flavourful water but its also jam packed with nutrients from the vegetables that cooked in it. My Mum is a great soup maker and this is a tip that she taught me. The only thing to be cautious of is broccoli water. This is such a strong water that its really only good for broccoli soup.

I do this too! It’s a great way to get a little extra mileage out of your food. As well, many vitamins are water soluble, so they enter the water when boiled. Saving the liquid for other uses saves some of those vitamins for your diet. :)
It’s also good for watering plants. Both pasta and veggie water can give your indoor plants a great boost.

Good tip. I am thinking this water would even be good as drinking water (cold)… healthy and, depending on what was cooked, it may not even taste any different. I might have to try it sometime.
